The consumption of the Ortolan—a banned French delicacy—epitomizes this ordeal: a tiny songbird, consumed whole beneath a veil, bones and all, as if cloaked in secrecy from both God and man alike. It is a primal, bordering on pagan ritual—one that inflicts discomfort, indulgence, and revelation in equal measure.
